Wild veg & mushroom season

Guizhou's forests produce some of China's best wild mushrooms and a long list of foraged greens. Locals eat them weekly. Visitors should know what's safe, what's seasonal, and what's worth the trip to a village market.

Season

Wild mushrooms in Guizhou peak Jun–Sep after warm rains. Spring greens (折耳根, 蕨菜) start March. Winter is for preserved products only.

Market price

鸡枞菌 peaks at ¥300/kg in season. 牛肝菌 ¥80–150/kg. 竹荪 ¥200+/kg dried. Wild greens ¥10–30/bundle. Tourist-area prices are 30–50% higher.

Safety

Guizhou has the highest mushroom poisoning rate in China. Most cases are villagers picking "what they've always picked" and missing a look-alike. If you didn't buy it from a known seller, don't eat it.

Common questions

Is it safe to forage?
For experienced foragers only, with a local guide. For everyone else: buy at the market. The risk is real — Guizhou reports 200+ mushroom poisoning cases per year.
Which mushrooms are "safe" in season?
鸡枞菌 (termite mushroom), 牛肝菌 (porcini-like, but cook fully), 竹荪 (dried, long-stored). Even these can cause gastric issues if undercooked. Avoid any mushroom you can't positively ID.
What about 折耳根 (houttuynia)?
Wild 折耳根 is in season March–May. The leaves are milder than the root. Always wash thoroughly (it's a wetland plant). See the fold-ear-root tolerance tool for taste preferences.
